4 oz noodles
1 tsp corn starch
2 tbsp fresh lime juice
2/3 cup sour cream
1 tbsp chopped jalapeno pepper
2 tsp chili powder
1 1/2 cup bell pepper strips
12 oz cooked turkey pieces
1 can black beans, rinsed and drained
1 cup frozen corn, thawed
1/4 cup shredded Jack cheese
2 tbsp chopped fresh cilantro
Cook the noodles per package directions (do not use salt).
Meanwhile, dissolve the corn starch in the lime juice.
Stir in the sour cream, jalapeno and chili powder.
In a skillet, saute the bell peppers over medium heat for 4 minutes.
Add the sour cream mixture, turkey, beans, corn and noodles.
Continue cooking, stirring occasionally, for 5 minutes, or until heated through.
Sprinkle with cheese and cilantro.
