Inspired by a dish at Tortuga's Lie in Duck, NC and recreated for the First Annual EmmettFood Potluck.
1.5 cup Lowfat plain yogurt
1/8 tsp cayenne pepper
1/2 tsp ground cumin
Strain yogurt by wrapping in cheese cloth and placing in a wire mesh over a bowl. Set aside for 30-40 minutes. Combine now thicker yogurt with the zest of both limes and the juice of one half. Add cayenne, cumin, and salt to taste.
