Preheat large frying pan over medium heat with a tablespoon of olive oil.
Chop onion, dice garlic, chop zuchinni, trim and chop chicken.
Saute zuchinni until it starts to brown.
Add onions and a pinch of kosher salt and saute until soft.
Add garlic and saute for a minute.
Add balsamic vinegar and allow to simmer for a minute.
Add tomatoes and chicken.
Reduce heat to low, cover, and simmer until the chicken is done (approx.
