This is an amazingly cheap and healthy dish that can be served a multitude of ways. I love it over spinach with some green onion, cheese, tomatoes, and a little sour cream... or with rice... or in a burrito. Use your imagination.


1 Large Sweet Onion
1.5 Bell Pepper (any color), chopped
3 clove Garlic (minced)
2 can Black Beans
2 tsp Crushed Red Pepper
4 tsp Ground Cumin
2 tsp Ground Corriander
2 tsp Olive Oil

In a saute or large frying pan over medium heat: Saute the onion and pepper in the oil until they start to soften Add the garlic and red pepper and continue cooking for a minute or two Add the cumin and stir to coat Add the beans along with their liquid (or a bit of the cooking liquid if using dried beans) Cover and simmer for 20-30 minutes
