Grated Raw Beet Salad

Preheat:

I challenge anyone who doesn't like beets to try this dish and not like it. Super simple, very refreshing. And no cooking! Grated beets can be dressed and kept in fridge for a couple of days. Toss again before serving!

Ingredients:

1/2 lb(s) beets
3 tbsp freshly squeezed orange juice
1 tbsp freshly squeezed lemon juice
1 tbsp extra virgin olive oil
2 tbsp minced chives, mint or parsley (or combo)
salt to taste
leaves of 1 romaine heart (optional)

Peel the beets with a veggie peeler, and grate in a food processor fitting with shredding blade.
Combine the orange juice, lemon juice and olive oil.
Toss with the beets and herbs.
Season to taste with salt.
Optional: line salad bowl or platter with lettuce leaves, top with grated beets and serve!
